Diabetes: super easy broccoli salad, and with bacon! 😋

Low in carbs for people with diabetes and once again, a super easy dish to make. You can do this ahead of time by cooking the broccoli the night before. You can make it spicy by adding red chilli flakes or like I do, with just the mayonnaise.

Diabetes & yummy recipe: This delicious broccoli salad recipe is a combination of broccoli, bacon and onion. Topped with creamy mayonnaise. Ideal for a picnic or a lunch away from home. You could also mix the broccoli with some cauliflower.

Ingredients

  • 600g broccoli
  • 200g bacon
  • 100g onion

Directions

  • Cook the bacon bits and when they are half done, add the onions. Cook on medium heat until done. Set aside
  • In another pan, on very high heat, with no oil, add the florets, let them “burn” and then add some extra virgin olive oil, mix. 
  • Reduce the heat on medium, put the lid on and cook util done (5-10 minutes).
  • Put the broccoli, the bacon and onions and add 2-3 tbsp of mayonnaise. Salt and pepper to taste
  • It’s done! 

Diabetes & Carb content:

200g of broccoli contains 2R or 20g carbs. 

👉For the exact amount of food for 1R or 10g carbs, weigh the food with the bacon, onion and broccoli and divide the weight by 2. This will give you the amount of salad in grams for 1R or 10g carbs.

👉You could add some shaved almonds to the dish when you serve it. 

👉You could also add some red chilli pepper if you like it spicy!
