Diabetes: Ice cream that won’t spike your blood sugar

Barbecue? Birthday? Pool party? Ideal ice lollies for diabetes and low-carb diets as it can sometime be tricky to know how much to bolus for!

Diabetes & yummy recipe: Summer months go hand in hand with ice creams or granité. Cool off with really nice little ice lollies or pure iced fruit! Easy carb content for little ones who try to navigate birthday parties and diabetes.

Ingredients

  • Alpro yogurts, here I used coconut, vanilla and blueberry flavour
  • watermelon and melon

Directions

  • Yogurt lollies:
  • Pour the whole jar of yogurt in an ice cube tray so that you know the carb content.
  • Put a stick in each little cube.
  • Freeze but do not leave it to freeze completely otherwise it won’t be nice. It needs to be a bit soft to be nice
  •  
  • Fruit granité:
  • Use watermelon or melon, chop in big pieces. Put them in the freezer.
  • When you want to make your granité, take the fruit, weight it. Wait a few minutes to warm up a bit
  • and blend it. It is done!

Diabetes & Carb content:

  • For the fruit granité: 200g of melon or watermelon equals to 1R or 10g carbs
  • For the ice lollies, it will depend on the brand but for Alpro coconut for example, each “ice cube” is 0,12R or 0,12g carbs

 

👉 Remember to put one yogurt flavour per tray otherwise it will be hard to count the carbs
