Diabetes: Low-carb healthy breakfast with tortilla

You can make your breakfast low-carb if you want. One tortilla is only 11g carbs. It can be a very healthy breakfast for vegetarians or meat-lovers! Major bonus, it can be done in 5 minutes.

Diabetes & yummy recipe: It is possible to make breakfast in 5 minutes in the morning. All you need is a little tortilla. and a topping of your choice. I am giving you here a few examples and I am sure they will become your favourites!

Ingredients

 

  • 1- Tortilla
  • one egg
  • dash of cream
  • 1/2 slice of bacon
  • little bit of onion
  • little bit of kale
  • Salt and pepper
  • add some grated cheese on top of the tortilla

If you do not like bacon, you could replace by some turkey bacon. 

 

  • 2- Tortilla
  • 1 courgette
  • pepper
  • feta cheese
  • one egg

 

  • 3- Tortilla
  • cottage cheese
  • paprika
  • rucula
  • 1/2 avocado
  • pomegranate

Directions

  • Prepare all your ingredients before starting to cook
  • Heat a pan and add the ingredients first, cook them a little bit, then add the eggs trying to keep it round
  • When it is starting to take, add the tortilla on top.
  • Continue to let it cook
  • Flip it and it is ready to eat!

Diabetes & Carb content:

Each small tortilla is around 1,1R or 11g carbs

The brand I am using is Mexifoods, wheat tortillas.

👉As a healthier option, you could use some wholegrain tortillas. I do not recommend corn ones since they tend to brake easily.
