Diabetes: yummy panna cotta dessert, perfect for carb counting

It can be difficult to know about the carb content in desserts. Not anymore! These panna cottas will delight you and you will be able to know exactly the amount of carbs in each little pot. Enjoy!

Diabetes & yummy recipe: With a birthday on the cards, if you know someone who has diabetes, it can be a nightmare to figure out what to do for a birthday cake.
Well, look no more! This is delicious and the coulis are so yummy!

Ingredients

  • 1L liquid cream
  • 300ml full fat milk
  • 500g frozen raspberries
  • 2 agar agar sachets
  • 3 vanilla pods

*(In my recipe there is no sugar, but if you find the panna cotta too bland, which it is to be honest, add 50g of sugar with the milk but don’t forget to add this to the overall carb. content)

Directions

  • Add to a pan on medium heat the cream, milk and vanilla
  • Let it cook and when the milk starts to bubble, stop the heat, cut the vanilla and get rid of the pods
  • Add the agar-agar or gelatine, mix with a wisk and let it rest.
  • When it has cooled down, get the vanilla and discard it.
  • Put the liquid in little glasses and put it in the fridge
  • When it is cold and hard to the touch, add the pureed raspberries (bland the raspberries and put through a strainer so that there’s no bits in the coulis).
  • Put in the fridge again for a few hours until it is ready to eat.

Diabetes & Carb content:

The whole liquid equals to 7,4R or 74g carbs

  • Raspberries equals to 3,2R or 32g carbs
  • Milk equals to 1,5R or 15g carbs
  • Cream equals to 2,7R or 27g carbs

Try and put the same amount of liquid and coulis in the little glasses and divide this number by the total carb content.

👉 Each little pot will make your sugar go ups after 3 hours because of the fat-protein index. You could replace the cream by just milk and it will not happen then. Or you could go for a walk too!
