Diabetes: oven-roasted tomato breakfast recipe

Sunday brunch cooked like a chef? Tomates provençales, a regional dish from my country ready in 10 minutes, tasty and delicious! T

Diabetes & yummy recipe: This could be another idea for a healthy and satiating breakfast. Tomatoes are the major dietary source of the antioxidant lycopene. Cooked in the oven with the assortment of lovely herbs will bring you happiness.

Ingredients

  • red tomatoes
  • smoked salmon
  • salad
  • scrambled egg (I used 1 egg), splash of milk

Directions

  • Cut the top of the tomatoes.
  • Try and make them the same weight so that it is easy to calculate the carb content.
  • Add some salt and pepper. The herbs de Provence
  • Put in the oven at 200C or 392F for 10-15 minutes
  • Get rid of the skins when out of the oven.
  • Add parsley

 

  • Make some scrambled eggs, add some salad and salmon. Your breakfast is ready!

Diabetes & Carb content:

As a general rule, 300g tomatoes equals to 1R or 10g carbs. Weigh them before you cook them!

👉If you eat more than 1 egg, remember that your blood sugar might go up after 3 hours (fat-protein index)
