Diabetes: 10 minute pizza that won’t increase my blood sugar!

When you have diabetes and love pizza, that could be a problem! Low in carb and very quick to cook. My tortilla base pizzas will not raise your blood sugar!

Diabetes & yummy recipe: Everyone loves pizza but it is normally full of fats and carbs. It can be really difficult to figure out how to bolus for it. Not anymore!! My pizzas will not raise your blood sugar and no, the base is not cauliflower! Rather, tortilla, lower in carbs than traditional pizza base. Everyone will enjoy them!

Ingredients

  • Mini tortillas
  • tomato purée
  • ham
  • cheese
  • black or green olives
  • rucula salad
  • anchovies
  • capers

Directions

  • Make sure all your ingredients are ready before you start making the pizzas.
  • The oven will be previously heated at 200C or 392F
  • Pizza 1: 2 tbsp tomato sauce, grated cheese
  • Pizza 2: 2 tbsp tomato sauce, ham cheese and green olives,
  • Pizza 3: 2 tbsp tomato sauce, cheese, anchovies, add rucola when its cooked
  • It will take 9 minutes to cook. Be vigilant!!

Diabetes & Carb content:

Each tortilla is worth between 1,2-1,4R or 12 to 14g carbs

👉Don’t put too much cheese because this is what contributes to the increase in blood sugar after 3 hours (fat-protein index)
