New gluten-free recipe: prawn and quinoa full protein

Enjoy this low carb diet, gluten free, prawn quinoa recipe. Full protein! This will be great for blood glucose regulation.

This is an easy dish that will keep your blood glucose stable and will contain a few amount of carbs for a healthy meal. The saffron butter sauce is OMG amazing!

Ingredients

  • 500g uncooked prawns
  • 500g leeks
  • 1 big onion
  • Coconut oil
  • 2 tsp saffron
  • 50g unsalted butter
  • Quinoa

Directions

  • Wash the leeks and cut them diagonally
  • Chop a white onion
  • In a large skillet, add some coconut oil
  • Add the onion and leek and cook in on medium heat
  • In the meantime, de-shell and devein the prawns 
  • Wash them
  • Incorporate them to the skillet with the leek and onion
  • In a separate pan, melt the butter and crushed saffron
  • Add it to the skillet
  • Mix
  • Enjoy with some quinoa on the side

Diabetes & Carb content:

  1. As a general rule, 300g of vegetables equals to 10g carbs. 

Keep this in mind. I am using 500g of leeks in my video (16g carbs).

If you make this dish for 4, the dish will contain 4g carbs

I am using a bag of COOKED quinoa. It contains 20g of carbohydrates and weighs 98g

  • My prawn, leek and quinoa dish contains 24g carbs (4g carbs for vegetables and 20g carbs for quinoa)
