How to Make the Perfect Fattoush Salad

Wonderful Lebanese fattoush salad recipe and tangy sumac dressing salad full of flavours. Prep this in advance and enjoy for lunch away from home!

For those of us who love Lebanese food and would like to make it at home, this Fattoush salad is a good first Lebanese dish. Super easy and sooo yummy!

Ingredients

For the salad

  • Tomatoes
  • Red pepper
  • Cucumber
  • White spring onion
  • Cos salad
  • Coriander, parsley, mint
  • Pomegranate

For the sumac dressing:

  • Sumac spice
  • Extra Virgin olive oil
  • Juice of one lemon

 

  • Pita bread

Directions

  • Wash and chop all the vegetables
  • I put the pita bread in the toaster since I don’t want to fry it but it is up to you
  • In a small bowl, mix the sumac spice, olive oil and the juice of one lemon

Diabetes & Carb content:

  • As a general rule, 300g of vegetables equals to 10g carbs. 

 

When you serve yourself some salad only (no bread), weigh the salad and then calculate your carbs. If you take 150g of salad, it will correspond to 5g carbs.

 

  • Wholemeal pita bread, brand Natursoy  



Halve the pita bread and toast it. I am only using half to a quarter pita bread per person.  

 

In this wholemeal pita bread, 20,2g carbs equals to 10g carbs

There 4 pita breads in this packet, each one weighs 70g. 

Each bread is 34g carbs 

 

I am using half for the Fattoush salad, so 17g carbs per pita bread
