Mediterranean diet recipe: The wholesome way to eat black eyed peas

Can this Mediterranean diet recipe help you in your quest for stable blood sugars? Here comes black eyed peas for a hearty and wholesome vegan recipes with low GI.

Black eyed peas are actually a BEAN! They will provide, fibre and protein and will suit vegetarians or vegans. 


  • 300g uncooked black eyed peas
  • Whole bunch of coriander
  • 150g red onion
  • 1 can coconut milk
  • 800g chicken stock
  • 2 tbsp coconut oil
  • Ginger, garlic, lemongrass
  • 2 tsp green curry paste
  • 2 tbsp coconut oil


  • The night before, put the dry black eyed peas in some water. Add a lot of water, (at least 1 part peas for 4 parts water)
  • The next day, drain and pour the black eyed peas in a cooking pot with boiling water. 
  • Cook for 1/2 hour or until cooked
  • Drain and set aside
  • Chop the red onion in little square
  • In another cooking pot, add some coconut oil
  • Add the minced ginger
  • A hole lemongrass squashed
  • green curry paste and garlic
  • Add the black eyed peas
  • Pour the chicken stock and the coconut milk
  • Chop the coriander and add it to the dish
  • Let cook until ready, for me 1/2 hour more
  • Take out the lemongrass
  • Mix 2 or 3 times to have a more hearty consistency
  • Serve the soup with a dribble of olive oil and a leaf of coriander to look pretty
  • Enjoy!

Diabetes & Carb content:


– The red onion contains 5g carbs (As a general rule, 300g of vegetables equals to 10g carbs)

– Goya coconut milk can contains 14g carbs

– 800g chicken stock contains 1,6g carbs

– 300g uncooked black eyed peas contains 170g carbs (17g uncooked black eyed peas contain 10g carbs)


*Either: you serve it to 8 people, 190/8= 23,8g carbs for each portion

*Or, Weigh the food only before serving (for example 1800g) and divided it by the total amount of carb (190). The number that you get is the weigh that corresponds to 1g carbs
