Authentic Thai Tom Yum Goong Soup Recipe

World famous Tom Yum goong soup from Thailand is delicious and easy. How to cook the best Tom Yum Soup with wonderful flavours from Thai herbs and prawn tomalley? Look no further my friend!

I also make Tom Yum Goong with Mungo bean vermicelli, for a gluten free Thai soup. Better still, they have a low glycemic index and will be perfect for your blood sugars. 

Ingredients

  • 16 uncooked large prawns
  • Mungo bean vermicelli
  • 2 tbsp coconut oil
  • 1 tsp sesame oil
  • 1 stick of lemongrass
  • 2 big cloves of garlic
  • 10cm piece of ginger
  • 2/3 kafir lime leaves
  • 1 tbsp fish sauce
  • 1/4 tsp lime juice
  • 2L chicken stock
  • 1 tsp of red curry sauce (if you like it spicy, add one more teaspoon)
  • Red chilli, green onion, coriander leaves and mint

Directions

  • Get rid of the prawn heads and shells
  • Set aside in a separate bowl from the prawns
  • Let’s make the stock:
  • In a cooking pan, add the coconut oil
  • Pour the prawns heads/shells
  • Ginger and lemon grass
  • kefir limes, garlic and the chicken stock
  • Add the red curry paste
  • Let it cook on slow/medium heat for 20 minutes
  • In the meantime, prepare the accompaniments:
  • Cut thinly some red chilli pepper and the spring onions
  • Chop the coriander
  • Set aside
  • Going back to the stock:
  • Drain the soup into a colander. You are left with just the stock
  • Either you want to eat it as is and then you can cook the prawns. Once they are done, serve and add some of the accompaniment vegetables 
  • Or if you want to have mungo bean vermicelli with the soup, cook them first in water and then add them to the stock with the prawns . Add the accompaniment vegetables.
