Easy, Most Tender Pork Tenderloin Recipe

My mother is Wonder Woman! My parents often invite many friends for dinner and her signature dish is filet mignon. I am sharing with you today this super easy recipe of pork tenderloin, the most tender and delicious meat that I cook in Le Creuset dish.

You can make an incredible pork tenderloin recipe with just a few ingredients. No oven needed but a le Creuset dish to cook your easy pork tenderloin recipe. Moist and tasty filet mignon / pork loin recipe in just 30 minutes with ratatouille and wild rice on the side, yummmm!!!

Ingredients

  • Pork loin or pork tenderloin (I calculate 1/2 a tenderloin for 2 people)
  • White onion
  • Garlic bulbs
  • Rosemary
  • Brown rice, basmati rice or wild rice
  • Ratatouille:
  • tomatoes
  • courgettes
  • white onion
  • red pepper

Directions

  • Rinse the tenderloin under cold water
  • Pat dry thoroughly
  • Get rid of the fat on the tenderloin with scissors
  • In a pre-heated Le Creuset dish, brown the meat on all sides
  • Reduce the heat to medium heat
  • Add the garlic bulbs and quartered peeled onion
  • Add some rosemary
  • Salt and pepper to taste
  • Cover the tenderloin and let cook for 20 minutes
  • Open the lid and cook for another 10 minutes
  • Baste the meat from time to time
  • You should have a lot of juice, if not pour in some water to make some juice
  • The meat should be cooked but make sure you check
  • Enjoy with some ratatouille and wild rice

👉 CARBOHYDRATE CONTENT:

  • For the RATATOUILLE, as a general rule, 300g of vegetables equals to 10g carbs.

 

*Weigh the vegetables before cooking and calculate the carb content. I use 600g vegetables, it equals to 20g carbs (600/300=2)

*Once the ratatouille is cooked, weigh the vegetables only. It weighs 500g 500 divided by 2 (the total amount of carbs)= each 250g equals to 10g carbs

                     ➡ 250g is the weight of the ratatouille for 10g carbs

 

  • 125g PRE-COOKED BROWN RICE pot from Costco 29g of pre-cooked brown rice equals to 10g carbs

 

                     ➡ Each pot of pre-cooked brown rice equals to 43g carbs (125/29)
