Mediterranean Diet Summer Tomato Salads

Mediterranean diet is based on the traditional cuisines of countries that border the Mediterranean Sea. I am making today two summer tomato salads and a watermelon salad. They are gluten free and require only two main ingredients.

In the summer, you want to make something quick and easy but nonetheless delicious. These three salads will take  you less than 10 minutes to make. Make sure you get the best fresh ingredients as you can.

Ingredients

  • Tomatoes of your choice. I use Montserrat and grapevine tomatoes
  • Tuna
  • White green onion
  • Basil leaves
  • Salt and pepper to taste
  • Roquet salad
  • Lamb’s lettuce – Watermelon
  • Olive oil
  • Sunflower seeds
  • Balsamic vinegar reduction

Directions

  • FIRST TOMATO SALAD:
  • Cut the tomato into big chunks
  • Slice the white onion thinly from top to bottom
  • Add the tuna
  • Slice a leaf of basil
  • Sprinkle with coarse sea salt and pepper to taste
  • Add a big dollop of olive oil

 

  • SECOND TOMATO SALAD:
  • With a peeler, get rid of the tomato skin
  • Chop the tomatoes as thinly as you can to make a sort of “purée”
  • Add some lamb’s lettuce
  • Add some big chunks of tuna
  • Sprinkle with coarse sea salt and pepper
  • Big dollop of olive oil
  • WATERMELON SALAD:
  • Slice some watermelon into little squares 
  • Add some roquette salad
  • Sprinkle sunflower and pumpkin seeds
  • Add a little bit of olive oil
  • Add some basalmic vinegar reduction
  • Enjoy!!

👉 CARBOHYDRATE CONTENT:

  • 300g of vegetables equals to 10g carbs
  • 200g of watermelon equals to 10g carbs
