Socca bread chickpea pizza

What is socca? Also called farinata this is a wonderful chickpea based bread, low gi and gluten free. Make a chickpea pizza base (also a gluten free pizza base!), some chips or chickpea bread, the possibilities are endless with chickpea flour!

Socca is very versatile, made with chickpea and water as a base. So good for your blood sugars, gluten free and low in carbs. I am showing you three different ways to make it: socca bread, socca chips and a pizza base. It is really tasty and easy to make so I hope you are going to like it too!


  • 1 cup or 120g of chickpea flour
  • 1 cup or 120g of water + 2 tablespoons of water
  • 1/4 teaspoon or 6g of cumin powder
  • 1/4 teaspoon or 6g of salt 
  • 2 tablespoon of olive oil


  • In a bowl, add the chickpea flour
  • Pour the water
  • Add the salt and cumin powder
  • Pour olive oil
  • Mix the socca mixture first with a fork and then with a whisk
  • Mix well
  • Let in rest for half an hour (I cover it with cling film)
  • Pre-heat the oven on high heat
  • Five minutes before cooking the socca mixture, put the broiler on and add an oven-proof pan in the oven as is. No oil, nothing
  • Then, carefully take out the pan, add some olive oil  and pour in the socca mixture
  • First step: cook for 5-6 minutes in the middle of the oven. When it starts to crack,
  • Second step: put under the broiler for a few minutes until it starts to blister and burn a little bit.
  • If making the pizza, take it out of the oven after the first step, set up the pizza toppings and put back in the middle of the oven, not under the broiler until cooked

25g of chickpea flour equals to 10g carbs
