Diabetes: French tomates farcies recipe

Tomates farcies is a traditional French low carb stuffed tomatoe with minced meat.

Diabetes & yummy recipe: Ever since a very young age, this  traditional French recipe would be cooked by my mum. We would eat it often with my sister. It will make you feel cosy, and warm you up on a winter’s day! I make it for my boys now!

Ingredients

  • 500g minced beef or pork
  • 4 big tomatoes
  • 1 onion
  • 1 egg
  • 1 tablespoon of cream
  • 30g parsley
  • 2 cloves of garlic
  • 1/4 teaspoon of chopped rosemary
  • salt
  • pinch of cayenne pepper
  • 1/2 teaspoon of herbs de Provence

Directions

  • Mix the minced meat and the white onion, egg, splash of cream, chopped parsley and chopped rosemary.
  • Leave it to rest
  • Chop the tops off the tomatoes but keep them aside.
  • Empty the content of the tomatoes, keep it in a separate bowl to make the sauce later.
  • Try and make the tomatoes the same weight.
  • Fill all of the tomatoes with the meat, add the little hats on top.
  • Put the dish in the oven for 45 minutes to one hour (The meat has to be cooked through). Thermostat at 200C or 392F
  • Make the tomato sauce: Take all the inside of the tomatoes, 2 pinches of salt, herbs of Provence, cayenne pepper and a clove of garlic.
  • Cook it for 10 minutes and then either leave it as is or mix it to make more of a sauce to add on the tomatoes farcies later on.
  • When the tomatoes farcies are cooked, add some brown or basmati rice to the side (or you could have some bulgur for example).
  • Top it all with the tomato sauce. Yum!

Diabetes & Carb content:

300g of tomatoes equals to 1R or 10g carbs
