Chicken tortilla with Toum, the best garlicky paste from Lebanon!

Wonderful for a picnic or a light lunch, this chicken tortilla is all about the Toum paste. Toum only requires a few ingredients, you can make it in advance for an easy life. It will keep for a week.

Toum is a very popular Lebanese sauce through the Middle East. You can eat it with any kind of meat like chicken, lamb or beef but also with vegetables or even sweet potato fries. The possibilities are endless!

I am showing you today how to make an easy tortilla with BBQ chicken, tomato and cucumber salad, covered with this lovely sauce.

The taste will not be too bitter, I will show you. Hope you like it!


  • Tortillas of your choice
  • Chicken upper thighs
  • White onions
  • Mint
  • Parsley
  • Tomatoes
  • Cucumbers
  • Toum sauce:
  • 1 big clove of garlic
  • 1 cup (or 230cl) + 4 tsp grapeseed oil or sunflower oil
  • 2,5 tsp lemon juice
  • Salt


  • Cut the tomatoes, mint and parsley, put in a bowl 
  • Cut the cucumbers, add salt, mix and set aside for the water to come out of the cucumber
  • Before your meal, empty the water and mix the cucumber with the tomato and herbs. Pour some extra virgin olive oil
  • Slice the onions and cook until caramelized
  • Barbecue or grill the chicken without oil or butter


  • For the Lebanese Toum paste:
  • Get rid of the garlic skins.
  • If you don’t want the sauce to be too strong, take out the germ of each garlic clove.
  • Put them in boiling water for 1 minute.
  • When done, pat dry the garlic really well and pulverise as much as you can.
  • Add on tablespoon of oil and mix for a minute. Add                                                                                       two more, one by one, mixing well in between.
  • Add one tsp of lemon juice. Mix. Add another one, mix. Oil mix lemon juice, mix.
  • Once you have mixed everything well, add the cup of vegetable oil little by little.
  • If you find the Toum to be runny, add an egg white and mix with the mixer.
  • get everything together and enjoy!

Diabetes & Carb content:

✽ As a general rule, 300g of vegetable equals to 10g carbohydrates (if you want tomato and cucumber salad on the side)

✽ Mini wheat tortilla from brand Mexifood, Each one contains 11g carbohydrates

✽ Wholemeal wheat tortilla from Each one contains 18g of carbohydrates If you don’t want to eat carbohydrates, just eat the chicken with the salad (less than 300g) and don’t forget to put some Toum sauce, that is what makes the dish!!
