Diabetes: Fun and healthy kids breakfast!

This is my kids' favorite breakfast at home! I love it too, especially banana and peanut butter. I explain the fat-protein index in the recipe for people with diabetes so you can eat it without worrying about a thing!

Diabetes and breakfast: this is a fun way to get our kids to eat healthy without taking away what they love. It has got fruits, good fats, protein and carbohydrates. Perfect to start the day and feel satiated for a long time!

Ingredients

  • 200ml Full fat milk
  • 6g or 2 tsp of Nesquick chocolate powder
  • 50g banana
  • 1 tbsp or 23g peanut butter
  • 1 egg
  • 20g bread

Directions

  • Fill a small saucepan three-quarters full with water and bring to a boil
  • Toast some rye bread until it is golden brown and crispy. Timing will depend on your toaster so watch the toast! 
  • In a cup, add the chocolate powder Nesquick to the full fat milk
  • Heat in microwave
  • Take the bread out of the toaster, make the soldiers (and weigh them for the carb count)
  • Cut the banana and add the peanut butter on top
  • Add either chia seeds, seeds, crushed peanuts or nothing at all!
  • Once the water has boiled,using a spoon, gently slide in the egg and set your timer for 4 minutes (if your egg comes from the fridge)
  • When cooked, place the egg in a cup holder and crack the top.
  • Add salt and pepper
  • Enjoy your breakfast!

Diabetes & Carb content:

👉 CARBOHYDRATE CONTENT: 

  • 200ml full fat milk equals to 10g carbs
  • 2 tsp of Nesquick equals to 5g carbs
  • 23g of peanut butter equals to 3,3g carbs
  • 50g banana equals to 10g carbs
  • 20g of bread equals to 10g carbs

 

THIS BREAKFAST FOR ONE PERSON HAS A TOTAL OF 38,3g carbs (or 3,8R)

*If you like round numbers, you could add 1 more tsp of chocolate powder, the total would be 40,8g carbs or 4R
