Best gluten free and low sugar Pavlova dessert!

Super duper dessert, perfect for people with diabetes or those of us who want to reduce our sugar intake. My own version of the pavlova is very easy to make, with low glycemic index berries and creamy yogurt. Yum!

Diabetes does not mean you have to be on a very strict diet with no dessert ever. Very special dessert that is really easy to make and will delight anyone. Enjoy with fresh fruits (or like me, frozen strawberries for a purée). I made the meringues with real sugar but you could use sweeteners if you wanted.

Ingredients

Ingredients for 4 people

  • 6 egg whites  
  • 4 Greek yogurt type Oikos
  • 150g strawberries
  • 400g of blueberries and/or raspberries
  • 2 tbsp sugar

Directions

  • Start the oven at 120C or 248F
  • Separate the egg whites from the yolks, be very careful not to have any yolks in the whites otherwise it will not go up
  • Start beating the egg whites
  • When fluffy, add the sugar
  • Make soft peaks
  • Oil some parchment paper and make the meringues. Don’t forget to make a little hole to place the fruits
  • Put in the oven for an hour with the door slightly ajar.
  • Cook for one hour
  • When done, let it cool in the oven
  • If you like the meringues harder, set the oven at 100C and cook for longer than one hour, check every half an hour after the hour until you are happy with the consistency.
  • In a saucepan, add the strawberries and cook for 1/2 hour
  • When the meringues are ready, let them cool in the oven
  • Set your plate, add the fruits on top of the pavlova
  • Add the Greek yogurt and some strawberry coulis
  • Enjoy!!

Diabetes & Carb content:

👉 CARBOHYDRATE CONTENT for 4 people 

  • Egg whites zero carbs
  • 2 tbsp sugar equals to 20g carbs (1 tbsp of sugar equals to 10g carbs).
  • 150g strawberries equals to 5g carbs (75g strawberries equals to 10g carbs)
  • 400g blueberries/raspberries equals to 13g carbs (each 300g of fruit equals to 10g carbs)
  • Yogurt Oikos is 5g for each

 

👉 PAVLOVA FOR ONE PERSON COULD BE CALCULATED AS FOLLOWS:

  • 1 meringue equals to 5g carbs
  • 100g raspberries/blueberries equal to 3,3g carbs
  • 1 Greek yogurt equals to 5g carbs
  • 150g of strawberry sauce (150g is 5g carbs between 4 people= 1,2g carbs) equals to 1,2g carbs

FOR ONE PERSON, A TOTAL DESSERT OF 14,5g carbs (or 1,45R)
