Diabetes: Low GI recipe poached egg and small baby broad beans

Super easy recipe for a low glycemic index meal👏 . You will love these delicious poached eggs. So easy to make.. and no mess!! Pair this with a slice of delicious buttered bread.

Diabetes diet: This is a wonderful idea for a low GI meal! These baby broad beans and poached egg will make a wonderful protein-rich dish that is perfect for people with diabetes and the ones who want to eat healthy.

Ingredients

  • Eggs
  • Beans
  • Paprika
  • Salt and pepper
  • Slice of bread if you wish

Directions

  • First, start cooking on low heat the baby broad beans. Mine are in extra virgin olive oil but you can get frozen broad beans.
  • Add 3cm of water to the poached egg pan and start heating it.
  • In the meantime, crack the eggs in the little egg cup holders.
  • When the water boils, add the eggs to the pan and close the lid
  • Count 4 minutes and 10 seconds (that is if your eggs where in the fridge like mine)
  • If you want to use bread, toast and butter it
  • When your eggs are ready, take them out of the pan
  • Slowly rid of  the water that has accumulated in the cup 
  • Put the poached egg on the beans
  • Add turmeric
  • Salt and cracked pepper
  • Slice the egg.
  • Enjoy!!

Diabetes & Carb content:

👉 CARBOHYDRATES COUNT IS FOUND IN THE BREAD AND THE BEANS ONLY

* For the bread, as a general rule (if it comes form a packet, you can calculate the exact carb content): Each 20g of bread equals to 1R or 10g carbs

* In my video, I use the little beans, they are only found in extra virgin olive oil since they are very “fragile” . 1R or 10g carbs corresponds to 38g of little beans in extra virgin olive oil. I use 96g of little beans for 2,5R or 25g carbs

* The bigger beans, or broad beans can be found in the freezer section of the supermarket, 163g of broad beans corresponds to 1R or 10g carbs.

A big difference between the 2!

Your lunch go be calculated days follow: – 25g carbs with the little beans (96g) – 20g carbs with the bread (40g) For a total lunch of 45g carbs
