Diabetes: Low GI bacon and crispy kale spaghetti

Diabetes dinner ready in 10 minutes with this super easy recipe: bacon and crispy kale spaghetti. Use brown pasta for a low glycemic index dinner

Diabetes diet: Who doesn’t like spaghetti? This is a very healthy dish since I am using brown spaghetti. The mix of crispy bacon and crispy kale is super delicious. Great dinner when you don’t fancy like cooking but still want something healthy!

Ingredients

  • 25g of kale (make sure you get rid of the stalks)
  • 25g bacon bits
  • 1/4 onion
  • Brown spaghetti
  • Extra virgin olive oil
  • Salt and pepper
  • Add a few pine nuts if you want to!

Directions

  • Cook the spaghetti in boiling water with a bit of salt
  • In a pre-heated saucepan, pour some extra virgin olive oil
  • Add the pre-cut bacon and cook on medium heat
  • Chop the onion and add it to the pan
  • Get rid of the stalks of kale
  • Roll it up so that it is easier to cut
  • Chop thinly
  • Let it cook until the kale is crispy
  • Drain and add the spaghetti to the saucepan
  • Mix well
  • It is ready to serve.
  • Add a few pine nuts if you fancy!

✱ I want to eat 3R or 30g carbs and for this I calculate the carb content of the uncooked spaghetti

👉 Each 15,6 g of uncooked spaghetti equals to 1R or 10g carbs
