Diabetes: Indian Punjabi lamb stew crockpot recipe

This Indian Punjabi lamb stew is a delicious and nourishing dish. Thanks to the slow cooking of the crockpot, the flavours will be even more enhanced.

Diabetes diet: This Indian lamb stew from Punjab is a really homestyle dish, made effortlessly  in the crockpot. Absolutely packed with wonderful flavours. There is no carbohydrates in this recipe so you could pair it with brown rice or bulgur if you need to include some carbs in your meals.

Ingredients

  • 750g lamb
  • 5cm piece of ginger
  • 1 garlic clove
  • 1/2 green chilli
  • 1 bay leave
  • 1 Greek yogurt (I use Oikos)
  • 2 tsp cumin powder
  • 200g spinach leaves
  • 3-4 cardamom pods
  • 200g onions
  • 250g or 1 cup of chicken stock
  • 1/2 tsp coriander powder
  • 100g cherry tomatoes
  • 1/2 tsp tomato paste
  • 1 tsp salt

Directions

  • Brown the lamb 
  • Set aside
  • separately, Purée the ginger and garlic
  • Chop the green chilli
  • Crack the cardamom pods to get the seeds out
  • Set aside
  • Chop the tomatoes
  • Slice the onions
  • Set aside
  • Heat some extra virgin olive oil in the crockpot and add all the previously cut ingredients as well as the bay leaf
  • Add tomatoes and onions to the crockpot
  • Pour the Greek yogurt and the lamb into the crockpot
  • Mix
  • Add cumin powder, coriander powder and tomato paste
  • Mix in the frozen pureed spinach (I used a frozen packet)
  • Mix
  • Pour the chicken stock
  • Mix 
  • Cover and let it cook for 5 to 6 hours
  • Enjoy!
