Diabetes: Asian baked peanut sprinkled chicken thighs

If you are craving for something Asian, easy and delicious, these crispy baked peanut sprinkled chicken thighs are for you! Don't worry about dinner, pair it with some quinoa and vegetables, yum!

Diabetes diet: Asian chicken with peanuts: when you want to increase your daily protein intake. Tasty and crunchy, the best way to eat chicken thighs. Team it with a carb of your choice, add some vegetables. Et voilà!

Ingredients

  • Chicken thighs
  • Parsley
  • Vegetable oil or peanut oil
  • Salt
  • Cayenne pepper
  • Crushed peanuts

Directions

  • Take the chicken thighs out of the packet
  • Place them on an oven-proof tray lined with parchment paper
  • Crush the peanuts 
  • Pour a little bit of vegetable oil or peanut oil on the chicken thighs
  • Sprinkle some salt generously
  • Cayenne pepper
  • Add the crushed peanuts
  • Put in the oven for 50-60 minutes at 200C or 392F
  • When they are ready, sprinkle some parsley before serving
  • Enjoy!
