
Diabetes diet: I tend to make this spaghetti dish for my boys on Sunday nights where I use leftover pasta and mix it with a lot of vegetables. Tip: weigh the uncooked spaghetti to calculate the carb content and then again once it has cooked since the weight will differ. You will know both measurements for later use😉
This vegetable and pasta dish contains 4R or 40g carbs:
30g carbs for the spaghetti
10g carbs for the vegetables (remember that 300g of vegetables equals to 1R or 10g carbs)
👉 I am adding some raw pine nuts but you could also brown them in a pan
