Diabetes: 10 minute fresh and healthy vegetables & spaghetti recipe

This is a vegetables & spaghetti dish, not the other way round! Easy and healthy veggies & brown pasta dish for people with diabetes

Diabetes diet: I tend to make this spaghetti dish for my boys on Sunday nights where I use leftover pasta and mix it with a lot of vegetables. Tip: weigh the uncooked spaghetti to calculate the carb content and then again once it has cooked since the weight will differ. You will know both measurements for later use😉

Ingredients

  • 47g brown uncooked Barilla spaghettis
  • 100g cherry tomatoes
  • 150g spinach
  • 50g onion
  • Extra virgin olive oil

Directions

  • Fill a large saucepan with water, boil and add the spaghetti.
  • Cook the pasta according to the packet instructions 
  • Whilst cooking, add in a separate pan, extra virgin olive oil
  • Add the bacon
  • In the meantime, slice the onion
  • Add it to the pan
  • Chop the cherry tomatoes in 4 
  • Put them into the pan
  • Chop the spinach. I am using frozen spinach but you can use it fresh too
  • Cook on medium heat
  • In the meantime, drain the pasta and pour in with the mix of vegetables
  • When serving, add some pine nuts, either roasted or not
  • Bon appétit!

Diabetes & Carb content:

This vegetable and pasta dish contains 4R or 40g carbs:

30g carbs for the spaghetti

10g carbs for the vegetables (remember that 300g of vegetables equals to 1R or 10g carbs)

👉 I am adding some raw pine nuts but you could also brown them in a pan
