Diabetes: Classic French crêpes recipe

This is a super easy diabetes recipe that I took from Thermomix. It has not too many carbs and I will help you calculate the carb content.

Diabetes diet: Sometime you just feel like something warm and sweet, this is a wonderful recipe for breakfast or snack. My boys love it with whipped cream and blueberries and some raspberries or with a teaspoon of peanut butter and whipped cream😋

Ingredients

  • 4 eggs
  • 200ml water
  • 500g full fat milk
  • 250g white flour
  • 50g butter

Directions

  • Put the butter in a saucepan and let it melt under low heat
  • In the meantime, brake four eggs in a bowl
  • Whisk them little bit first
  • Add the water
  • Pour the full fat milk
  • Add the flour
  • Pour the melted butter
  • Mix with a whisk or with a blender
  • Leave it to rest for half an hour
  • It’s ready to cook.

Diabetes & Carb content:

Each crêpe is worth 1,5R or 15g carbs.

I have made the crêpes with white flour, it would be better with brown flour. You could also reduce the carb content by using skimmed or almond, soja milk 

👉 For the ladies with gestational diabetes, don’t eat more than 2 crêpes
