Diabetes: One hour Thanksgiving turkey? Yes!!

The best Thanksgiving turkey with lots of juices and flavours, done in one hour so you can spend more time with your loved ones. For diabetes, it has no carbohydrates.

Diabetes diet: Making Thanksgiving turkey can be daunting and time consuming. If you are like my family and end up wasting a lot of meat, I make oven-roasted turkey breasts, both moist and delicious with a super gravy! 

Ingredients

  • 4 boneless turkey breasts with the skin on
  • Salt and pepper
  • Extra virgin olive oil
  • 200ml of chicken stock
  • A few baby tomatoes
  • Oregano
  • 3 cloves of garlic crushed but with the skin on
  • Rosemary
  • 2 tsp chickpea flour

Directions

  • Turkey:
  • On a oven-proof dish, add the 4 turkey breasts with the skin side up
  • Season the turkey with salt and pepper
  • Pour some extra virgin olive oil on the turkey
  • Sprinkle some oregano on the turkey
  • Add 100ml of chicken stock in the dish (not on the turkey)
  • A few baby tomatoes around the turkey
  • 3 cloves of garlic crushed but with the skin on
  • Add a branch of rosemary
  • Gravy:
  • when the turkey is cooked, put it aside, cover it and make the gravy
  • Scrape the pan with a wooden spoon to get all the good things out
  • Discard the garlic skins 
  • Empty the content of the oven-proof dish into a pan
  • With a fork crush everything or later on, before serving, if you prefer it smooth, use the blender
  • Turn the heat on medium
  • Add 100ml chicken stock
  • 2 tsp chickpea flour
  • Mix with a whisk until it gets thicker.
  • Serve immediately

The turkey has no carbs

2tsp or 6g of chickpea flour contain 2,4g carbs
