Diabetes: Thanksgiving pumpkin purée recipe!

What a lovely presentation for a simple pumpkin puree! This is another one of my super easy dishes for diabetes. Low in carbs, they will delight your guests and family. A winner with my boys!

Diabetes diet: This is a delicious way to eat more vegetables. It is a winner for the little ones, especially presented in these little boats! This has a few ingredients and will not spike your blood sugar. Have it with some turkey, it will be delicious!

Ingredients

  • 1000g pumpkin

  • Salt and pepper

  • 1 egg

  • ¼ tsp nutmeg powder

  • 100g grated cheese

Steps

  • Boil some water
  • Cut the skin of the pumpkin, get rid of the seeds and cut it in small cubes
  • Place the pumpkin in boiling water and cook for 20 minutes or until soft
  • When it is cooked, drain the pumpkin
  • Puree the pumpkin with a fork or with a blender for smoother consistency
  • In a mixing bowl, add a knob of butter and brake an egg
  • Mix with the pumpkin
  • Put an equal amount of pumpkin in 5 recipients.   I have in bought little pumpkins that I emptied and used as my little boats
  • Put some grated cheese on top. 
  • Place in a preheated oven at 200C or 392F for 20 to 30 minutes, until golden
  • Enjoy!

The total amount of carbs in this recipe is 5R or 50g carbs

Each little boat will contain 1R or 10g carbs 

👉 200g pumpkin equals to 1R or 10g carbs.)
