Diabetes: Asian sesame & ginger carrot salad recipe

This bright and colourful Asian sesame ginger and carrot salad recipe is fresh and so flavourful. It could be a wonderful side dish and is done in 10 minutes.

Diabetes diet requires that you try and eat as much low glycemic index food as possible. This is the dish that could be good for you as a starter or a side dish. You can make it ahead of time or keep it in the fridge for 2-3 days (carrots only, without the sauce)

Ingredients

  • 300g Carrots
  • sesame seeds
  • spring onion
  • For the sauce:
  • 1/4 cup soya sauce
  • 1/4 cup olive oil
  • 1 tbsp white vinegar
  • 2 tsp sesame oil
  • 1/2 tsp ginger powder

Steps

  • Chop both ends of the carrots
  • Peel off the skin
  • Grate the carrots
  • Put in a bowl, set aside
  • Sauce:
  • In a container, mix all of the ingredients for the dressing
  • When it is time to serve the carrots, pour the dressing on top 
  • Add a few spring onions
  • Black sesame seeds

Diabetes & Carb content:

 300g of carrots contains 1R or 10g carbohydrates

👉 For our gluten-free friends, use Tamari sauce instead of soya sauce, it doesn’t have any carbs
