Diabetes: One-pan salmon with creamy vegetable sauce

This bright, colourful and absolutely delicious one-pan salmon will delight the whole family. The sauce in this recipe is soo rich and creamy.

Diabetes diet: If you need to add fish to your diet, this one-pan salmon recipe will delight you! This has no carbs so you can team it with anything you want. In my family, we have it with some brown rice and broccolini on the side.

Ingredients

  • 3 salmon filets
  • 200g cherry tomatoes
  • 50g spinach
  • 1 shallot
  • A handful of basil leaves
  • 100cl fresh cream
  • 40g grated cheese
  • 3 tbsp extra virgin olive oil
  • Salt and pepper 

Directions

  • Add some extra virgin olive oil into a pre-heated pan and cook the salmon until almost done
  • Set aside
  • Chop some cherry tomatoes (I cut them in 2 and 4 parts)
  • Mince the shallot
  • In a separate pan, fry the shallots in some extra virgin olive oil until translucent 
  • Add the tomatoes
  • Chop some basil and add it to the pan
  • Cook for a few minutes on medium heat
  • Add the tomato sauce
  • Chop the spinach and add them to the pan
  • Mix well
  • Add some salt and pepper
  • Grated cheese
  • Pour the cream
  • Mix 
  • Add the salmon and let cook on low heat until salmon is ready
  • Enjoy!

 This one-pan salmon dish has no carbohydrates and will serve 3 people
