Diabetes: My favourite low GI & Protein rich quinoa salad

What about knowing you are giving nutritious food for your body and enjoy your meal at the same time?

Diabetes diet: This is my favourite quinoa salad. Low glycemic index as well as full of protein, it will be perfect for your blood sugar. Enjoy it at home or in a lunch box, this quinoa salad will make you feel really good knowing that you are doing the best for your body!

Ingredients

  • 98g cooked quinoa
  • Little box of bacon
  • One chicken breast
  • Parsley
  • 50g of apple
  • 5-6 Walnuts
  • Extra virgin olive oil
  • Pepper

Directions

  • Cut the chicken breast in small bite-sized portions
  • In a pan, add some extra virgin olive oil and cook the chicken
  • When done, set aside
  • Empty the packet of bacon in the same pan.
  • Cook the bacon
  • Set aside
  • Cut the apple in small bite sized portions
  • In a salad bowl, add the quinoa, chicken and bacon
  • Add some pepper and extra virgin olive oil
  • Add some chopped parlsey
  • Add the apples and roughly chopped walnuts
  • Mix everything and serve straight away
  • Bon appétit!

The total carb content is 2,5R or 25g carbs
