Diabetes: Asian style pumpkin soup recipe & coriander pesto

Asian style pumpkin soup recipe with a secret twist: coriander pesto. It gives an additional delicious flavour to the soup. For people with type 1 diabetes, I help you calculate the carb content.

Diabetes diet: Soups can be fun and really delicious! This Asian style pumpkin soup recipe is a classic pumpkin soup with a secret twist. A meal in itself, it will not spike your blood sugar. Have it with some buttered bread on the side. Yum!

Ingredients

  • 1kg pumpkin
  • 165g onion
  • 1/2 teaspoon red curry paste
  • 5cm ginger
  • Coconut milk
  • 60ml sunflower oil
  • big bunch of coriander

Directions

  • Peel and cut the pumpkin in medium squares
  • Set aside
  • In the same pot where you will cook the soup, add the coconut oil
  • Pour the onions, previously chopped
  • Chopped ginger
  • And Curry paste
  • Add the pumpkin
  • Pour the chicken stock
  • Let it cook on medium heat
  • When done, blend the soup
  • Pour the coconut milk
  • Set aside.
  • Coriander pesto:
  • Chop the coriander in a deep bowl
  • Add sunflower oil
  • Blend
  • If the pesto is too dense for you, add some water  little by little
  • When ready to serve, add some sliced red onions, chopped red chillis and the pesto
  • Yum!!

Diabetes & Carb content:

The Asian style pumpkin soup contains  7R or 70g carbs

200g of pumpkin equals to 1R or 10g carbs

👉 Weigh the soup only (without the coriander pesto) and divide that number by 7, it will give you the weight for 10g carbs.
