Diabetes: Authentic Vietnamese spring rolls recipe

Do you want to make better than restaurant spring rolls? This recipe was given to me by a friend of mine from Vietnam so it is the real deal!! I help with the carb content for the people with type 1 diabetes.

Diabetes and yummy recipe: This Vietnamese spring roll recipe is really authentic! Have them for a snack, light dinner or lunch. You will get protein from the chicken, vegetables from the carrots and broccoli and the pleasure of eating a really nice dish!😍

Ingredients

  • 50g broccoli
  • 100g carrots
  • 150g potato
  • spring roll sheets
  • Coriander
  • 330g minced chicken
  • Vermicelli noodles
  • 2 tsp soja sauce or tamari
  • 1 tsp sesame oil

Directions

  • In a bowl, put the minced chicken
  • Grate the potato, add to the bowl
  • Grate the carrots, add to the bowl
  • Chop the broccoli in very small bits, add to the bowl
  • Chop the coriander (don’t forget to chop some of the stems too, the flavour is there), add to the bowl
  • Set aside
  • Pour some boiling water in a separate bowl and add the noodles, they should cook in 3 minutes
  • Drain the noodles and slice them 
  • Add the noodles to the vegetable bowl
  • Add sesame oil and soja sauce
  • Mix
  • Start the process of making the spring rolls (it is better explained in the video)
  • Once they are all done, heat up some sunflower oil
  • Once the oil is hot, cook the spring rolls. Around 3 minutes each
  • Enjoy!

Diabetes & Carb content:

This dish is for 4 people, I have made 12 spring rolls and I would recommend 3 spring rolls each.

👉 Each spring rolls equals to 1,2R or 12g carbs
