Diabetes: delicious Thai aromatic prawn soup recipe

Diabetes or not, I believe it is important in life to enjoy your food! This dish of Thai aromatic prawn soup will delight your taste buds: so creamy, full of flavours and as spicy as you want it to be.

Diabetes and yummy recipe: Forget take-out, this Thai prawn soup with red curry and coconut milk is THE best! You could have it with udon noodles if you wanted to add some carbs or you could use Konjac noodles if you didn’t.

Ingredients

  • 18 prawns (3 prawns per person)
  • 1 tbsp coconut oil
  • 1 tsp ginger
  • red chilli to taste
  • clove of garlic
  • 1/2 tsp lemongrass
  • 1 tsp of red curry paste
  • 4 lime leaves
  • cilantro
  • 100g onion
  • 500ml chicken stock
  • 200ml full fat milk
  • 200g coconut milk

Directions

  • Thinly chop an onion
  • In a pan, heat some coconut oil and add the onion
  • Start cooking
  • In the meantime, chop the red chilli thinly, mince the garlic and the ginger
  • Add them to the pan with the lime leaves
  •  Chop thinly some lemongrass and add it to the pan
  • Pour the coconut milk
  • Red chilli paste
  • Pour the stock
  • Add some chopped coriander 
  • Add the prawns
  • Top it up with coriander and sliced spring onions
  • It is done!

The Thai prawn soup is for 4- 6 people

👉 If you share the soup for less than 4 people, please be aware that your blood sugar might go up after 3 hours 

👉 You could add some noodles if you want the carbs
