Diabetes: figs and walnuts toasty bread for breakfast

When you have diabetes, it can be difficult to create both yummy and healthy breakfasts. This fig and cottage cheese is your answer and will be done in no time! A breakfast or snack that tastes wonderful with salty and sweet flavours.

Diabetes and yummy recipe: With the arrival of autumn weather, crops of various vegetables and fruits are ready to harvest. My favourite: figs!  The perfect fig and cottage cheese toast for breakfast or snack that is both healthy and delicious!

Ingredients

  • Any slice of bread of your choice
  • Cottage cheese
  • figs
  • basil leaves
  • Extra virgin live oil
  • Pepper

Directions

  • Get a nice slice of bread, I am using here walnut and raisin bread
  • Spread some cottage cheese on top
  • Top with sliced ripe figs
  • A little drizzle of extra virgin olive oil
  • Season with some pepper
  • Add chopped basil leaves
  • If you want, add a walnut or two to your slice of bread
  • Et voilà! It’s done, enjoy!!

Diabetes & Carb content:

As a general rule, 20g of bread equals to 1R or 10g carbs

80g of fig equals to 1R or 10g carbs

👉 Instead of cottage cheese, you could use some Philadelphia cheese.        

👉 If you have plain bread, add a walnut or two, it goes really well with figs!
