Diabetes: Refreshing Asian cucumber salad recipe

This Asian cucumber salad is cool and refreshing and pairs with a lot of dishes: as a starter, a side dish.Super good! A delicious salad with very little carbs for anyone with diabetes.

Diabetes & yummy recipe: Sometimes you don’t fancy like cooking but at the same time crave for something tasty. This is a super easy dish that will take you 5 minutes to prepare. Although cucumber doesn’t have much taste this salad will be bursting with flavours😋

Ingredients

  • Cucumber
  • Little tomatoes
  • Mint
  • Sesame seeds
  • For the sauce:
  • 1/2 tsp sesame oil
  • 1/2 tsp vinegar
  • 4 tsp Tamari (gluten free and carb free) or soja sauce,
  • 3 tsp of fresh grated ginger

Directions

  • Cut the top and bottom of the cucumber
  • Chop it in little cubes
  • Sprinkle some salt over it and mix
  • Let it rest whilst you cut the tomatoes and make the dressing.
  • The cucumber will loose some of its water
  • Make the dressing:
  • Add tamari or soja sauce
  • Sesame oil
  • Vinegar
  • Chopped ginger
  • Mix
  • Back with the cucumber
  • Discard the water
  • Put everything in a bowl
  • Add sesame seeds and mint
  • Add the dressing to the salad, mix
  • Enjoy!
