Diabetes: Roasted cauliflower salad recipe

If you have diabetes, this recipe has only a few carbs. This is a seriously delicious roasted cauliflower salad. Gorgeous flavours!

Diabetes & yummy recipe: I have taken inspiration from a wonderful book by Yotam Ottolenghi, Jerusalem. This salad is absolutely delicious and so easy to make. Everything goes well together, with the added crunch of the pomegranate and hazelnuts. Yummy!

Ingredients

  • Cauliflower
  • Grenada
  • Parsley
  • 29g hazelnuts
  • Extra virgin olive oil
  • 1/4 tsp cardamom seeds
  • 1/2 tsp cumin
  • 1 tsp cinnamon
  • Salt and pepper

Directions

  • Cut the cauliflower in florets
  • Weigh it to check the total amount of carbs 
  • Put the cauliflower on an oven roasting tray
  • Add salt, pepper and extra virgin olive oil
  • Mix
  • Cook in the oven at 200C or 392F for 20-30 minutes
  • “Burn” the hazelnuts in a pan with no oil for a minute or so
  • Use the pestle and mortar to break them in smaller bits
  • When the cauliflower is done, weigh it again
  • When the cauliflower has cooled down, add the parsley
  • Hazelnuts
  • Extra virgin olive oil
  • For the spices, add them little by little to make sure you like the taste.
  • Sprinkle with pomegranate and some salad if you wish  

Diabetes & Carb content:

👉 Remember that 300g of uncooked cauliflower equals to 1R or 10g carbs
