Diabetes: Simple, yet delicious beetroot salad recipe

This great salad has the perfect balance of sweet and salty from the beetroot and feta cheese. For people with type 1 diabetes, remember to calculate the carb content, beetroot has carbs.

Diabetes & yummy recipe: Beetroots are under appreciated! This beetroot salad, full of anti-oxidants will be done in under 10 minutes. So versatile, you could have it as a filling in your sandwiches or just on its own. Add vinaigrette and it is ready to eat! 

Ingredients

  • Pre-cooked beetroot
  • Parsley 
  • Goat’s cheese
  • For the vinaigrette:
  • In a bowl, put 1 tsp mustard
  • Add 1tsp vinegar
  • 3 tbsp of extra virgin olive oil or vegetable oil
  • Mix it 
  • Put it on the beetroot salad

Directions

  • Take the beetroot out of the packet and wash them
  • Let them drain
  • Cut the root and the top
  • Cut the beetroot in little squares
  • In a salad bowl, add the beetroot
  • Then, add some crumbled feta cheese or crumbled goats cheese
  • Take some parsley and chop it thinly
  • Sprinkle on the salad
  • For the vinaigrette:
  • 1tsp vinegar
  • 1 tsp mustard
  • 3 tbsp of vegetable or extra virgin olive oil
  • Salt and pepper

Diabetes & Carb content:

👉 Every 172g pre-cooked beetroot equals to 1R or 10g carbs
