Diabetes: warm and creamy cauliflower soup recipe

You will love this cauliflower soup recipe! It will satisfy your craving for a warm, creamy soup, and there is no need for cheese or cream. Perfect for diabetes type 1, diabetes type 2 or gestational diabetes.

Diabetes & yummy recipe: We all need to up our vegetable intake and this cauliflower soup could be one of them. You could have it for lunch or a light supper. It will be even more delicious topped with some parsley, pepper and why not a little bit of red chilli!

Ingredients

  • 550g cauliflower
  • 1L chicken stock  
  • 50g onion  
  • 1/2 teaspoon of cumin
  • To serve the soup, you could add:
  • Parsley
  • Pepper
  • Thinly chopped red chilli, If you like it spicy

Directions

  • Cut the cauliflower in florets
  • Put aside
  • You could do 2 things, either cook it as is, or roast it in the oven (it will take longer though)
  • In a pot, add some extra virgin olive oil and the onions.
  • Cook until they become translucent
  • Add the secret ingredient, cumin
  • Mix
  • Cook for a minute or so and then
  • Add the cauliflower
  • Add the chicken/vegetable stock
  • Let the cauliflower cook for around half an hour
  • When done, blend the soup
  • The soup is ready to enjoy!

Diabetes & Carb content:

This cauliflower soup is for 6-8 people. The total carb content is 2,2R or 22g carbs.

(If you give 6 people a bowl of soup, each one contains 0,36R or 3,6g carbs)

👉 Remember that 300g of vegetables equals to 1R or 10g carbs

👉 The cauliflower soup can be kept in the fridge for 2 days. You could also freeze it, it will keep well.
