Diabetes: Oven-roasted French tomato tart

This delicious tomato tart will make you travel to the South of France. Hot or cold, it is simply yummy! For people with gestational diabetes, don't have more than a quarter of the tomato tart.

Diabetes & yummy recipe: One layer of tomato will be enough. If you put too much, it will make the pastry wet and it will not stay crispy. This recipe is also a great way to get your children involved in the kitchen. They will feel really proud of themselves! And they should, it tastes wonderful!


  • 1 sheet of puff pastry
  • 6 red round shaped  tomatoes
  • 1-2 tablespoon of mustard
  • Grated cheese, only a small amount
  • Salt and pepper to taste
  • 1/2 tsp dried oregano or parsley


  • Take the puff pastry and put it into an oven tart dish with the parchment paper still on.
  • Poke holes in the pastry with a fork
  • Cut the tomatoes in slices, not too thin. Set aside whilst you put the mustard on the pastry.
  • Put enough mustard to cover a thin layer of the pastry
  • Set the tomatoes in lines
  • Put in the oven for half an hour at 200C or 392F
  • Half way through, add the grated cheese,  the oregano or the parsley
  • When you taketh tart out of the oven, get rid of the parchment paper. If you let it cool, make sure the surface has got air holes to let the moisture out. (Otherwise it will become soggy)
  • Enjoy the tomato tart with a salad on the side!

Diabetes & Carb content:

This tomato tart is for 6-8 people

  • The puff pastry I am using equals to 8,5R or 85g carbs
  • If you are putting more than 300g of tomatoes, do not forget to add it to the overall carb count of the whole tart.

👉 I found that puff pastry is the one that has the least amount of carbs when you compare it to the other types of pastry.
