Diabetes: Breakfast of boletus mushroom on toast recipe!

Want a healthy brunch this weekend? Healthy, easy and delicious🥰 For ladies with gestational diabetes, breakfast should be no more than a big slice of bread like mine and a yogurt or a small apple.

Diabetes & yummy recipe: Very easy to put together, you only really need 2 ingredients. Use any mushroom you want, or a mix of them. I love boletus mushrooms, they taste lovely when cooked with a bit of salt and parsley. Great for breakfast, brunch or a snack!

Ingredients

  • Boletus mushroom
  • Parsley
  • Salt and pepper
  • Slice of bread, I have brown bread with nuts and raisins
  • I am adding some baby tomatoes and rucula on the side.
  • Delicious!

Directions

  • Wash the mushrooms with a damp cloth to get rid of the dirt (otherwise, cut it off or wash it)
  • Add in a pan some extra virgin olive oil and a knob of butter
  • Cook the mushrooms 
  • Add some salt and pepper
  • In there meantime, chop some parsley and add to the mushrooms
  • Chop some baby tomatoes
  • Put the Mushrooms on the bread (toasted or not)
  • Enjoy with some rucula and tomatoes on the side 

Diabetes & Carb content:

  • As a general rule, 20g of bread equals to 1R or 10g carbs
