Diabetes: Thai green chicken curry with potatoes or basmati rice

Green chicken curry is one of the first "exotic" dishes I learned to make for my son who has diabetes and I keep making it over and over again! šŸ„°

Diabetes & yummy recipe: Thai green curry with chicken is a one pot dish that can be ready in 30 minutes. This is the ultimate comfort food that tastes amazing: your tastebuds will thank you for it! The key ingredient is the lime leaf, with its intense citrus fragrance. Yum!

Ingredients

  • Three chicken breasts
  • One white onionĀ 
  • 2 cloves of garlicĀ 
  • Ginger, 5cmĀ 
  • Half a tablespoon of green curry sauceĀ 
  • 100g haricot beansĀ 
  • 150g red pepperĀ 
  • 3 scallions, green leaves includedĀ 
  • One aubergineĀ 
  • 2 frozen lime leavesĀ 
  • 400ml chicken stockĀ 
  • One can of coconut milk
  • Small potatoes, as needed

Directions

  • Brown the chicken breasts on high heat and do not add oil so that it “burns” a little.
  • Do not cook, only brown the meat
  • Take it out and cut in small bit sized. Set aside
  • In a wok or a pan, add some coconut oil, cook the onion, garlic and ginger
  • Add the curry paste, mix
  • Add the chicken, mix
  • Add the chopped red pepper, scallions, aubergine and haricot beans
  • Add the lime leaves as is.
  • Add the chicken stock and the coconut milk
  • Mix
  • Add the small potatoes with or without the skin.
  • Let it cook until the potatoes and chicken are cooked.
  • Enjoy!
