Diabetes: Asparagus and feta cheese quiche recipe

This quiche would be lovely as a starter or when you feel like having a little something to eat. For the ladies with gestational diabetes, only eat 1/6th of the quiche with some salad. Yogurt and fruit.

Diabetes & yummy recipe: Asparagus with feta cheese result in a tasty asparagus and feta quiche dish. Enjoy as a light lunch or a starter to your meal. It is an easy way for my little one to eat some vegetables! You could also put some in the children’s lunchboxes the next day.

Ingredients

  • Puff pastry 
  • 200ml full fat milk 
  • 3 eggs 
  • 30g onions 
  • 200g asparagus
  • 50g feta cheese
  • pepper

Directions

  • Put the puff pastry on an oven tray, pierce holes with your fork. Set aside
  • In a bowl, brake three eggs
  • Add the full fat milk
  • Add some pepper
  • Chop the onions and asparagus
  • In a pan, add some extra virgin olive oil 
  • Add the asparagus and onion to it
  • Cook for 10 minutes
  • Mix it to the egg mixture
  • Pour it on the pastry
  • Add the feta cheese
  • Bake in the oven for 20-30 minutes at 200C or 392F
  •  Enjoy!

This is for 6-8 people.

Total carbs for the asparagus quiche: 100g or 10R
